Acrylamide In Food May Increase Risk Of Breast Cancer, New Findings ...

ScienceDaily (Jan. 16, 2008) — Acrylamide is a chemical formed when frying, roasting, grilling or baking carbohydrate-rich foods at temperatures above 120°C. Acrylamide is thus found in a number of foods, such as bread, crisps, French fries and coffee. Tobacco smoking also generates substantial amounts of acrylamide.

Preheat oven to 215 degrees F. Line a baking sheet with parchment paper.

In a large bowl, use an electric mixer on medium speed to beat together egg whites, 1 teaspoon strawberry extract, and cream of tartar until frothy. With mixer running, add powdered sugar in tablespoon increments. Add food coloring and continuing beating until stiff peaks form, taking care not to overbeat.

Transfer mixture to a pastry bag or large zip-top plastic bag fitted with large round tip. Pipe into 2-inch spirals on prepared baking sheet. Bake in preheated oven for 45 minutes to 1 hour, rotating once. Turn off oven and open door. With meringues still inside oven, let dry out for 10 to 12 minutes. Remove parchment paper from baking sheet and let meringues cool completely.

New pumpkin, squash varieties to brighten your garden

With snow piled up to the eaves, it's hard to think about any other color in the garden except white.

But scanning the list of new varieties in pumpkin and squash, the colors of gold, deep orange, rich green, even blue, recall the heady days of late summer and fall.

A blue pumpkin is definitely a conversation starter. "Jarrahdale," an offering from Botanical Interests, features bluish-gray shell and golden to orange flesh. Fruit weighs 5 to 12 pounds, and the flesh is described as "sweet, nutty, stringless." It can be used in baking or fall decor. Harvest is in 100 days.

There is also "Blue Magic," winter squash that's just as interesting in color. The blue-gray miniature has the familiar shape, fine-grained flesh and other qualities of Hubbard squash, but in a smaller "family-size" package.


Legislators, staff members lay down law on good meals

For the quail: In a large bowl, combine the Italian salad dressing, Worcestershire sauce, lemon juice, garlic and bay leaf. Sprinkle with salt and pepper. Place quail or chicken in the marinade and refrigerate at least 1 hour.

Preheat oven to 350 degrees. Remove meat from marinade (do not discard) and wrap each with 1 slice of bacon, securing with a wooden toothpick. Place quail or chicken in 9-by-12 glass baking dish, pour reserved marinade over meat, then sprinkle with steak seasoning. Cook at 350 degrees for 45 to 50 minutes, until bacon is done.

For the salad: Shred the cabbage and place in a large salad bowl. Add Italian dressing and salad seasoning. Toss and serve.

Why area fans love Brett Favre

Gary Wrobel of La Crosse admits he has a Packers shrine in his home. Even better, he has season tickets and he will be at Sunday's game. But he figures it will be hard to top last weekend's game."That was just like being in a snow globe. It was warm. I didn't even wear gloves. The excitement was about 10 times more than a regular game."Wrobel came by his season tickets honestly he waited."We put our names (on the list) in 1962. We were on the waiting list until 1990. They sent a letter to me," he said.Wrobel posed for a photo with Favre in 1992. He has an autographed Favre jersey and even met Favre's mom, Bonita, at a tailgate party in 1995.Though Wrobel will give away tickets to loved ones for preseason games, at this time of year he's the one sitting in the stadium at Lambeau Field."I'm 67 years old.
